Sea Buckthorn Gin Sour 

Emma Bouget and Jo Brydie, launched Fidra gin in 2018, inspired by the tiny but beautiful island of Fidra, just off the coast of North Berwick. They decided to only use botanicals in their gin that they could sustainably pick or grow in and around East Lothian. The main botanicals aside from juniper are rosehip, sea buckthorn, elderflower, thyme, and lemon thyme. This tasty gin cocktail is the perfect conclusion to any spring lunch or dinner.

Ingredients:

50ml Fidra Gin

25ml lemon juice

15ml sea buckthorn juice

25ml vanilla gomme

1 egg white

Lemon wheel

Method:

Add all of the ingredients to a shaker.  Dry shake, then add ice and wet shake. Double strain over ice into a rocks glass. Garnish with a lemon wheel.
