Emilia’s peach and mozzarella salad recipe

Before our youngest heads off to uni in a few weeks (eek!), she has become the self appointed live-in-cook of the household. We watch too many tiktoks of life in the Hamptons…

For lunch yesterday she knocked my socks off with this stunning grilled peach and mozzarella salad:

Ingredients:

  • 2 ripe peaches, halved and pitted

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 4 cups of salad leaves

  • 1 ball of mozzarella cheese

  • 1/4 cup balsamic vinegar

  • 1 tablespoon honey

  • Optional: chopped nuts or mixed seeds

    Instructions:

  1. Preheat your grill to medium-high heat.

  2. Brush the peach halves with olive oil and sprinkle with a pinch of salt and pepper.

  3. Place the peach halves on the grill, cut side down. Grill for about 2-3 minutes on each side, or until they have grill marks and are slightly softened. Remove from the grill and let them cool slightly.

  4. While the peaches are grilling, in a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat and cook for 3-4 minutes, or until the mixture has slightly thickened. Remove from heat and set aside.

  5. On a serving platter, arrange the greens.

  6. Once the peaches have cooled a bit, cut them into slices and arrange them on top of the greens.

  7. Break the burrata cheese into smaller pieces and place them over the peaches.

  8. Drizzle the balsamic vinegar and honey reduction over the salad.

  9. Sprinkle the chopped fresh basil over the top, and if you like, add some chopped nuts/seeds for extra crunch.

  10. Serve the salad immediately and enjoy!
