A Spring Menu to Savour
The new spring menu is a love letter to Scottish produce. We savoured a delicate lobster raviolo and a cloud-like cheddar soufflé, followed by charcoal-grilled cauliflower with herb velouté and perfectly cooked halibut—each dish fresh, flavourful, and beautifully plated. Desserts, like a zingy lemon crème brûlée tart and a bold local cheese board (a little shy on crackers), round off the experience. Led by Executive Chef Graham Paulley, the kitchen champions Scotland’s land and sea, sourcing fish from David Lowrie, beef from Henderson’s, and sourdough from Barnett’s Bakery. Standouts include scallops with XO chilli butter and roasted halibut with smoked shellfish sauce.
