A New Number One, at Number One…

A visit to The Balmoral’s Michelin-starred Number One restaurant is always a treat. Beautifully executed modern dining coupled with world class Scottish hospitality in the most exquisite surroundings - what’s not to love? 

The rich red lacquered walls are adorned by art in the form of a large format triptych print of a Scottish oak tree by Adam Ellis and artwork from the Royal College of Art in London. Standout design elements include striking dove grey wool banquettes with golden yellow leather accents, elegant Lyndon Albany chairs with distinctive button backs and solid timber oak flooring throughout the restaurant.

And from today, an Edinburgh-born Head Chef will be at the helm. Mathew Sherry (29) joins Number One from his role as Head Chef of Michelin-starred Northcote in Lancashire, where he worked closely with Executive Chef Lisa Goodwin-Allen. Prior to Northcote, Mathew honed his skills under Chef Patron Dominic Jack, working for seven years at Castle Terrace in Edinburgh during the restaurant's Michelin-starred reign.

Mathew will continue to showcase seasonal Scottish produce at the forefront of the Number One dining experience. He has developed a new 3-course menu and 7-course seasonal menu using classical flavours and modern techniques.

Chef Sherry, commented on his appointment:

“I am honoured to return to my home city to head up the kitchen at such an iconic restaurant and work with the many seasoned professionals already here at The Balmoral. The detail on each dish has been carefully designed, from sourcing seasonal ingredients to the way they are displayed and plated, everything has been thoughtfully considered. I am thoroughly enjoying working closely with Restaurant Manager, Emma Lonie and her established front of house team. We will ensure that we continue to deliver a truly special experience for every guest.”
