It is the perfect blend of fruity sweetness and bubbly sophistication, making it an ideal treat for any occasion - even if it’s just to bask in the evening sun in your own garden.

This Raspberry Prosecco Sorbet recipe makes approximately 4 servings. Each serving is a light, refreshing portion, perfect for a small dessert or a palate cleanser between courses.

Ingredients (serves 4)

  • 200g fresh or frozen raspberries

  • 240ml Prosecco

  • 100g caster sugar

  • 1 tbsp lemon juice

  • Fresh mint leaves for garnish

Method

  1. In a blender, combine the raspberries, sugar, and lemon juice. Blend until smooth.

  2. Strain the raspberry puree through a fine mesh sieve to remove the seeds.

  3. Stir in the Prosecco until well combined.

  4. Pour the mixture into a shallow dish and place it in the freezer.

  5. Every 30 minutes, stir the mixture with a fork to break up any ice crystals. Repeat until the sorbet is firm (about 3-4 hours).

  6. Scoop the sorbet into bowls, garnish with fresh mint leaves, and serve with an extra splash of Prosecco for a bubbly finish.
