Delicious Raspberry Prosecco Sorbet

This Raspberry Prosecco Sorbet recipe makes approximately 4 servings. Each serving is a light, refreshing portion, perfect for a small dessert or a palate cleanser between courses.
Ingredients (serves 4)
200g fresh or frozen raspberries
240ml Prosecco
100g caster sugar
1 tbsp lemon juice
Fresh mint leaves for garnish
Method
In a blender, combine the raspberries, sugar, and lemon juice. Blend until smooth.
Strain the raspberry puree through a fine mesh sieve to remove the seeds.
Stir in the Prosecco until well combined.
Pour the mixture into a shallow dish and place it in the freezer.
Every 30 minutes, stir the mixture with a fork to break up any ice crystals. Repeat until the sorbet is firm (about 3-4 hours).
Scoop the sorbet into bowls, garnish with fresh mint leaves, and serve with an extra splash of Prosecco for a bubbly finish.
